Good Morning Blog Buddies


Good Morning

Looking at another rainy, cloudy day here in Maryland. We had like 4 beautiful hot days in a row and now they are calling for rain and cool temps for a while. But i guess we need it.

I was looking through a cookbook the other day and came across this recipe for Nettle Pie. I didn't know you could eat nettles. I remember when i was younger and found out what they were all about. Not a good thing. I walked into a bush of those with shorts on. My legs started burning and i didn't know what happened. That is about all i remember of those. So here is the recipe for it:


Nettle Pie

1/2 paper grocery bag of young nettles
3 Tablespoons of butter
2 Tablespoons of chopped onions
2 cloves of garlic chopped
2 Tablespoons of flower
1 Cup Milk
Bay leaf
1 cup grated Cheddar cheese
2 eggs
2/3 cup flour
1/3 cup milk
1/3 cup water
1/4 teaspoon salt
1/2 cup Parmesan Cheese

Wearing rubber gloves, remove central stem from nettles. Steam until tender, then place in a large greased casserole dish. In a frying pan, melt butter, add onion and garlic and cook until limp. Mix in flour. Add mild and bay leaf and cook. stirring, until thickened. Pour this mixture over the nettles. Spread grated cheese over nettles and sauce. Beat remaining ingredients together for 2 min. and pour over the cheese. Sprinkle with Parmesan cheese. Bake at 400 for 20 min. Serves 6
